Classic Macaroni Salad

Ingredients
Dressing
- 1 cup water
- 1 cup sugar
- ½ cup white vinegar
- 1 pint mayonnaise
- ½ teaspoon turmeric
- ½ teaspoon celery salt
- ½ teaspoon salt
- ½ teaspoon white pepper
Salad
- 1 lb elbow macaroni or ditalini pasta
- 7 hard-boiled eggs, chopped
- 1 to 1½ cups onion, finely chopped
- 2 cups celery, chopped
Instructions
- In a small saucepan, combine the water, sugar, and vinegar.
- Heat over medium heat, stirring until the sugar is completely dissolved.
- Remove from heat and allow the mixture to cool completely.
- Stir in the mayonnaise, turmeric, celery salt, salt, and white pepper until smooth.
- Cook the macaroni according to package directions. Drain and let cool.
- Pour the dressing over the cooled macaroni and mix well.
- Cover and refrigerate overnight.
- The next day, add the chopped hard-boiled eggs, onion, and celery. Stir until evenly combined.
- Refrigerate for several more hours before serving for the best flavor.
