Ray's Penne A La Vodka

Ingredients
- 1 box Penne Pasta
- 1 Pint Heavy Cream
- 1 6 oz can Tomato Paste
- ½ Medium size Vidalia Onion sliced
- 2 oz Vodka
- 2 oz Freshly shredded Parmesan
- 1 Large clove Garlic diced
- 1 pound Ham cut into strips
- 2 Tbls Olive Oil
- 12 cups Water
- 4 Tbls Salt
Cooking Pasta
- Bring Water to boil.
- Add salt
- Add Pasta
- Cook till al a dente and drain
Cooking Sauce
- In separate pan on medium heat
- Add Olive Oil
- Add Onion with a pinch of Salt and Pepper
- When Onion is translucent add garlic
- Deglaze with Vodka
- Add Heavy Cream and Tomato Paste
- Stir until smooth.
- As sauce begins to simmer turn heat lower
- Blend in cheese
- Add ham
- Once ham is heated, Add sauce to Pasta
- Let simmer until well combined!
